MARGIN: 0px 10px 10px 0px; WIDTH: 400px; CURSOR: hand; HEIGHT: 300px" alt="" src="http://2.bp.blogspot.com/_wqlEjo4ABQc/SVmL41HLPaI/AAAAAAAAAS4/xpdgiMWpKUg/s400/collage14.jpg" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Acredito que é um dos doces que mais gosto de fazer e comer,... humm...humm ....essa receita foi um achado que encontrei em uma edição da revista Claudia Cozinha - Chocolates... claro fiz algumas modificações e variações de recheio.&lt;br /&gt;&lt;br /&gt;A massa do pão de mel fica bem macia e leve.&lt;br /&gt;Apesar de ser uma receita elaborada... vale a pena fazer.. aqui em casa não sobra hhhummzinho....&lt;br /&gt;&lt;br /&gt;Pão de Mel recheado com Damasco&lt;br /&gt;&lt;br /&gt;Massa&lt;br /&gt;500 gr açúcar mascavo&lt;br /&gt;2 xícara(s) água&lt;br /&gt;4 unidades ovos (separar as claras)&lt;br /&gt;500 gr farinha de trigo&lt;br /&gt;1 colher de café canela em pó&lt;br /&gt;2 colheres sopa chocolate em pó&lt;br /&gt;1 colher sobremesa fermento em pó&lt;br /&gt;100 ml mel&lt;br /&gt;&lt;br /&gt;Recheio&lt;br /&gt;250 gr damasco&lt;br /&gt;3 colheres sopa açúcar&lt;br /&gt;1 colher sopa rum&lt;br /&gt;&lt;br /&gt;Cobertura&lt;br /&gt;1,2 kg chocolate em barra (meio amargo) fracionado (não há necessidade de dar choque térmico) ou chocolate meio amargo e ao leite (&lt;a href="http://cybercook.terra.com.br/imprimir.php?tp=mat&amp;amp;cod=992"&gt;veja como dar choque térmico&lt;/a&gt;)&lt;br /&gt;&lt;br /&gt;Modo de preparo&lt;br /&gt;Misture o açúcar mascavo com a água e leve para ferver (coloque em panela grande, pois levanta fervura) deixe aproximadamente 20 minutos até formar uma calda. Deixe esfriar&lt;br /&gt;Bater as claras em neve e reserve. Coloque na tigela da batedeira a calda já fria com as gemas, bater até dobrar o volume, adicionar aos poucos a farinha de trigo, chocolate em pó, canela em pó e o mel até ficar uma mistura homogênea, misture as claras em neve e por último o fermento em pó e misture bem. Coloque nas forminhas untadas previamente encher até a metade, leve para o forno para assar em temperatura média 150 graus C até dourar levemente (evitar assar demais para manter a textura macia), após assado reserve para esfriar antes de rechear.&lt;br /&gt;&lt;br /&gt;Recheio de damasco:&lt;br /&gt;Deixe de molho os damasco com um aproximadamente uma xícara de água por alguns minutos para hidratar, leve ao fogo médio com açúcar até ficar mole. Bata no liquidificador ou mixer até formar um geléia.&lt;br /&gt;&lt;br /&gt;Cobertura de chocolate:&lt;br /&gt;Derreta o chocolate no microondas em potência média por 2,30 minutos (a cada 500 gr)&lt;br /&gt;&lt;br /&gt;Montagem:&lt;br /&gt;Corte os pães no meio e recheie com a geléia de damasco, depois banhe pelo chocolate derretido com auxilio de garfo largo, coloque sobre o papel manteiga até secar e decore a gosto com arabescos.&lt;br /&gt;&lt;br /&gt;Rendimento: 35 pães de mel (forma individual de cinco cm de diâmetro)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Outra opção de recheio Doce de leite : feita com 1 lata leite condensado cozida por 40 minutos na panela de pressão&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://receitas.maisvoce.globo.com/Receitas/Doces_Sobremesas/0,,REC38246-7778-PÃO+DE+MEL,00.html"&gt;&lt;img id="BLOGGER_PHOTO_ID_5285411192166298738" style="FLOAT: left; chocolate meio amargo ou ao leite (á gosto)&lt;br /&gt;- 1 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;cx&lt;/span&gt; creme de leite (200 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;gr&lt;/span&gt;)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Modo de preparo&lt;br /&gt;&lt;br /&gt;Misturar o leite condensado com o suco de limão e mexer até engrossar (devido a acidez vai ficando um creme consistente) adicionar o creme de leite sem soro, misturar bem e colocar nos &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;copinhos&lt;/span&gt; e levar a geladeira, após gelado colocar a calda de framboesa ou &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;ganache&lt;/span&gt; chocolate ainda quente.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Calda de framboesa&lt;br /&gt;&lt;br /&gt;Misturar o açúcar na framboesa e levar por 1 minuto no &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;microondas&lt;/span&gt;.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;Ganache&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Derreter a barra de chocolate no &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;microondas&lt;/span&gt; por 2 minutos em potência média, depois acrescentar o creme de leite e misturar bem até ficar o creme bem liso. Coloque agora margarina cortada em cubos e vá trabalhando a massa com a ponta dos dedos. Irá formar uma farofa úmida, agora coloque água, até formar uma bola uniforme (não sove a massa), envolva em plástico filme (pvc) e leve à geladeira por 30 minutos. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Massa:&lt;br /&gt;&lt;br /&gt;- 40 g de fermento biológico fresco&lt;br /&gt;- 2 colheres de sopa de açucar&lt;br /&gt;- 1/2 copo de requeijão de leite morno&lt;br /&gt;- 1 colheres de sopa de manteiga sem sal ( bem cheia) aprox 60 g&lt;br /&gt;- 3 ovos batidos ligeiramente&lt;br /&gt;- 2 gemas&lt;br /&gt;- 1/2 colh de sopa de açucar aromatizante (vanila,fácil de achar em lojas de culinaria ou essencia de baunilha caso não encontre)&lt;br /&gt;- 500 g de farinha de trigo especial (Renata )&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Creme para sonho:&lt;br /&gt;- 700 ml de leite&lt;br /&gt;- 1 lata de leite condensado&lt;br /&gt;- 3 gemas passadas pela peneira&lt;br /&gt;- 3 colheres sopa (bem cheias) de amido de milho&lt;br /&gt;- 1 colher de sobremesa de essência de baunilha&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Modo de Preparo&lt;br /&gt;&lt;br /&gt;Faça o processo do pão, dissolva o fermento noa çucar, junte o leite morno e os demais ingredientes,sendo por ultimo a farinha de trigo. Costumo rasgar a massa, faça isso que o sonho fica mais macio.Adicione a farinha até obter uma massa ainda pegajosa, porem facil de trabalhar. Deixe dobrar de volume. Sove delicadamente a faça bolinhas do tamanho médio. Para o sonho é preciso bolear a massa, se não souber, faça bolinhas na mão e tente fechar a massa deixando lisa a parte de cima e puxando para abaixo, como se fosse amarrar a massa, coloque este lado para abaixo e deixar descansar até dobrar.&lt;br /&gt;&lt;br /&gt;1 - Assado : assim que bolear a massa coloque na forma que vai assar e deixe dobrar de volume, depois é só levar ao forno, não pincele com gema, senão o sonho mucha.&lt;br /&gt;&lt;br /&gt;2- se for fritar que é tradicional, boleie a massa e coloque para dobrar encima da mesa bem enfarinhada, cubra com pano e deixe dobrar. Aqueça o oleo e qdo estiver quente, abaixe o fogo e coloque os sonhos tomando o cuidadopara tira-lo da mesa, use uma espatula de cortar pizza. Frite cada lado até ficar dourado, retire com escumadeira e coloque sobre papel toalha.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;Dica&lt;/em&gt;&lt;/strong&gt;: coloque a última parte que fritou sobre o papel. Depois de frio, corte no meio sem chegar ao fim e recheie com creme de confeiteiro, pulverize açucar de confeiteiro por cima.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Creme para sonho:&lt;br /&gt;&lt;br /&gt;Coloque numa panela o leite, o leite condensado, o açúcar, as gemas e o amido de milho e leve aofogo, mexendo sempre, até formar um creme firme.Quando frio, misture a essência e empregue com saco de confeiteiro e bico pitanga.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ps. Peneire os ingredientes secos em uma tigela grande. Adicione a mistura de ovos e bata até incorporar. Aqueça o óleo a 200° C. Coloque 1 xícara da massa dentro de um funil que tenha o bico bem largo. Deixe a massa pingar no óleo quente, começando do centro para as bordas, com um movimento circular, fazendo um ziguezague por cima quando a massa estiver acabando. Desligue o fogo e acrescente a salsinha picada e as azeitonas, corrija o sal se necessário. Coloque em outro recipiente e deixe esfriar.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Massa:&lt;br /&gt;Em um recipiente coloque a farinha, fermento e o sal acrescente a margarina e com as pontas dos dedos forme uma farofa bem soltinha, adicione o ovo e dê liga a massa &lt;em&gt;sem sovar.&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Montagem:&lt;br /&gt;Abrir a massa com o rolo de macarrão com ajuda de 2 plásticos e um pouco de farinha de trigo, deixar a espessura da massa não muito fina (média), tire o plástico de cima e coloque sobre uma forma redonda tamanho médio, coloque o recheio e repita novamente a operação de abrir a massa, feche bem as bordas do empadão, pincele com uma gema e decore à gosto. Acrescente o ovo e pulse novamente. Coloque a água morna aos poucos, cerca de 3 colheres de sopa e processe até a massa unir bem. Retire do processador e deixe descansar por 30 minutos. Caso não tenha um processador prepare a massa utilizando a ponta dos dedos para incorporar os ingredientes.&lt;br /&gt;Pique a cebola e o alho, coloque o azeite em uma panela e doure, acrescente o palmito picado e o caldo de legumes, refogue em fogo baixo por cerca de 5 minutos, acrescente os tomates também picados e refogue por mais 5 minutos para engrossar o recheio adicione 1 colher sopa amido milho diluído em um pouco de água e misture ao recheio até engrossar (desprender do fundo da panela) . Coloque o sal e pimenta-do-reino, azeitonas picadas e salsa e cebolinha picadas. Reseve e deixe esfriar .&lt;br /&gt;Abra a massa com um rolo com a espessura fininha. Corte discos de 15 cm de diâmetro, coloque 2 ou 3 colheres (sopa) de recheio em cada disco, umedeça as bordas e feche como pastel, apertando as bordas com a ponta de um garfo. No meio, coloque água, fermento e tudo que for líquida menos manteiga. Mexa com os dedos um pouco da água com o fermento e um pouco da farinha. Deixe descansar por 15 minutos. Coloque para levedar por 15 minutos. Misture os ingredientes restantes com a massa fermentada. Coloque a farinha aos poucos até a massa ficar elástica. Deixe descansar por 2 horas em recipiente coberto com um plástico. Forme os pães e coloque em uma forma untada e polvilhada. Passe uma gema por cima e deixe descansar mais 1 a 1,5 hora coberto com um pano. Adicionar a margarina, leite condensado, creme de leite e o chocolate em pó, misturar bem ate formar uma massa homogenea. Forrar um forma removível com papel alumínio e colocar a massa cremosa .&lt;br /&gt;Levar ao freezer por 3 horas.&lt;br /&gt;Cobertura - Ganache&lt;br /&gt;Derreta o chocolate em barra no microondas por 1 minuto em potência média ou banho maria, adicionar o creme de leite com soro até ficar bem homogêneo.
